Homemade Granola
Today I’m impersonating Georgia O’Keefe, who, in addition to being a fabulous painter, was also a wonderful cook. I’ve been making a version of her granola recipe since a visit to Santa Fe in 2008, where I bought her cookbook, A Painter’s Kitchen.
I use whatever I have in the pantry, and today it was the ingredients in this crunchy, healthy version.
Homemade Granola
3 cups rolled oats
1 cup pine nuts
1 cup wheat germ
1 cup dried cherries
1 cup chopped dates
4 tsp. canola oil
3 tsp. honey
3 tsp. cinnamon
Mix all together in a bowl. Place in 350 degree oven for 30 minutes, stirring every 5 – 10 minutes. Let cool and serve with milk, yogurt or eat plain.
