Ziti with roasted tomatoes and sardines

This is a recipe I created a long time ago that combines 2 of my favorite things. Pasta and sardines. I also use anchovies if I don’t have sardines, and I’ve gotten CRAZY a few times, and used BOTH!  I always have both in my pantry and I make my own roasted tomatoes at least monthly. With a few simple ingredients, you can have a delicious meal in about 15 minutes. Pair with your favorite bottle of red wine and some crusty Italian bread for dipping, and you’re set to go.
Tomatoes, sardines and olive oil roasting in the pan.
Just add your favorite pasta to the sauce, and you’ve got a meal.
Dont’ forget to top it with grated Locatelli cheese, which is a salty, rich Italian Pecorino-Romano. The only cheese I ever use. Find it at Central Market.

Ziti with roasted tomatoes and sardines
8 oz. ziti, cooked to package instructions
1 container cherry tomatoes, sliced in half and roasted with olive oil, salt, pepper and oregano, in a 250 degree oven for 2 hours
1 can sardines, with backbones removed
3 Tbsp. olive oil
Grated Locatelli cheese
Roast the tomatoes in the oven per above instructions. Add all ingredients to a non stick skillet. Top with Locatelli cheese and Mangia~
