These Pizza Muffins are the perfect alternative to boxed bagel snack pizzas. And I promise you, you’ll get asked to make these over and over and over. PS – Don’t forget to par-bake the dough before adding the toppings. Mmmmmm.
Makes 16 pizzas
1 tube refrigerated pizza dough (Pillsbury makes a gluten-free dough)
1 cup Marinara sauce
1 cup shredded Mozzarella cheese
1 cup chopped pepperoni
Preheat oven to 400 degrees. Remove the dough from the container, but don’t unroll it. Place it onto the counter and cut into 16 even slices. For even slices – Cut the roll in half. Then cut those 2 in half. Then cut those 4 in half. Then cut those 8 in half. Place each slice in the bottom of a greased muffin tin. Place in the oven (with no toppings) to pre-cook the dough for 8 minutes. Remove from oven and top with sauce, Mozzarella and pepperoni. Place back in 400 degree oven for 15 – 20 minutes. Let cool in the muffin tins for 10 minutes before serving.
