Mini Fish Bites and Fish Sliders

 

Fish Stick BitesHomemade Mini Fish Bites (forget about pressed fish)

Makes about 12 small fish bites

2 6-ounce halibut filets

1 egg

1 tsp. water

1 cup Ritz Cracker Crumbs

1/2 cup Parmesan cheese

1 tsp. salt

1/4 tsp. pepper

olive oil spray

Preheat oven to 450 degrees. Cut halibut lengthwise into bite sized sticks. Any size is fine and each piece of fish will be different. Mix egg and water in a bowl and whisk until combined. Set aside. Place 2 sleeves of Ritz Crackers and salt and pepper in a blender or food processor and pulse into crumbs, but not until powdery. Place cracker crumb mixture on a plate. Dip each fish bite into the egg, then dredge in the cracker crumb mixture and place on a parchment-lined cookie sheet. Spray each fish bite with olive oil spray. Bake for 8 minutes and turn. Bake another 8 minutes and serve with homemade tartar sauce.

Easy Tartar Sauce 

1 cup mayonnaise (your choice)

2-3 Tbsp. sweet relish (I used Heinz in the plastic bottle)

Combine in a bowl and serve with the fish bites. Store in refrigerator.

Fish Stick Sliders

Fish Bite Sliders (just say no to fast food)

Take 2 fish bites and place in a King’s Hawaiian roll. Top with a slice of American cheese. Place under the broiler until the cheese is melted, top with tartar sauce, and you’ll never see those Golden Arches again.
